According to research, diets rich in tomatoes products may reduce the risk of prostate cancer. Cooked tomatoes have a high content of lycopene, a red carotenoid that gives tomatoes, watermelon, and pink grapefruit their red color. Carotenoid is fat soluble and cooking tomatoes with oil enhanced lycopene absorption. Lycopene is an antioxidant.

Failing to get chicken rice from my neighbourhood food stall, I came up with this unplanned lunch of sandwiches that I made for YH and myself with ham and bacon bought from the supermarket as well as other ingredients from my fresh box! Since it is a main meal, I added baked beans and slices of pineapple for fiber. What was lacking here was a helping of fresh greens that would not only enhance the food value but as well as the presentation.

This variety is much softer after stewing and all of us love it.

The shop proprietor at the wet market was so nice and she introduced this beancurd sheets to ER and I. She cautioned us when we bought another packet of beancurd sticks, which, she said, are harder and chewy even when cooked.

This is the type of homemade chiffon cheesecake that I have been looking forward to eat...I am really glad Rika has learnt to make it...a slice of good cheesecake once in a while is...:))) YH cautioned me about the fats, the cholesterol content, in cheesecake though... Oh well, eating it probably once in a month is not indulgence, right?

During a week's break from lectures, which is rare, besides cakes and cookies, Rika baked our 1st chiffon cheesecake and choux buns with her friends and chipping in to cook meals sometimes.

Have not cooked local "yellow noodles" for a long time. Somehow, we dislike the alkaline taste (is this the right description?) which is overpowering sometimes.

Beef Bourguignonne With Turmeric Rice


A meal of delicious pinkish Sirloin beef slices and onions and button mushrooms cooked in Port (wine). The onions were so sweet and one would ask for more~ Thumbs up for this meal and wouldn’t mind to eat it again the next day! Rika always cooks better beef steaks than me :)

Seafood Pasta

Rika cooked this light and yummy dish dressed with homemade tomato sauce :) Instead of canned tomatoes we used fresh ones and added prawns and scallops to it!

Recipe:
Seafood Pasta (Serves 4)

Ingredients:
450g pasta
2 tbsp olive oil
2 cloves garlic, crushed
450g fresh scallops (Or 250g scallops and 200g prawns)
salt and ground black pepper
2 tbsp chopped fresh basil

For the sauce
2 tbsp olive oil
½ onion, minced
1 clove garlic, crushed
½ tsp salt
2 x 400g cans plum tomatoes

Method:
1. For the sauce, heat the oil in a non-stick frying pan. Add the onion, garlic and a little salt, and cook over a medium heat for about 5 minutes until just softened, stirring occasionally.
2. Add the tomatoes, with their juice, and crush with a fork. Bring to a boil, then reduce the heat and simmer for 15 minutes. Remove from the heat and set aside.
3. Cook the pasta in plenty of boiling salted water, according to the instructions on the packet, until al dente.
4. Meanwhile, combine the oil and garlic in another non-stick frying pan and cook until just sizzling. Add the scallops and ½ tsp salt and cook over a high heat, tossing until the scallops and prawns are cooked through.
5. Add the cooked seafood to the tomato sauce. Season with salt and pepper, stir and keep warm.
6. Drain the pasta well and place in a large serving dish. Add the sauce and the basil and toss thoroughly. Serve immediately.

Stir-fried Assorted Veggies With Mince And Fish Sauce


Using mincemeat in stir-fried dishes has almost completely reduced food waste in my home because sliced meat is often left on the plate when I used it with vegetables. And fish sauce is a good substitute of soy sauce in cooking veggies…more flavourful and bring out the taste of ingredients at best, in my opinion.

Set Meal

Besides homemade fish cakes and fishballs this lunch included my new version of prawn fritters with carrots and chives. One more ingredient that I would like to add in is bean sprouts. It is best to eat these fritters warm.

I like chives in fritters, omelettes, dumplings and kuehs. To me, this vegetable is at its best and enhances the taste of such food greatly!
