Prawn Paste Chicken + Recipe

Pre-mixed prawn paste chicken sauce in bottle is hard to find although the pre-packed powder is easily available. The later is milder in flavours so I tried to concoct my own. The comment on this dish was: it tasted pretty close to those we had ordered at eateries. Still I want to adjust the recipe below. I will reduce "lam yee" to a quarter piece and increase prawn paste to 2 tablespoons.

My version:
Recipe:
Prawn Paste Chicken

Ingredients:
1 kg drumsticks – deboned
1 pc “lam yee”
½ pc “fu yee”
1 tbsp 5-spice powder
1 tbsp oyster sauce
1 tbsp prawn paste
½ an egg white
½ tbsp soya sauce
1 tsp sugar
½ tsp pepper
1 ½ tbsp wine
Ajinomoto to taste
¾ tbsp ground red yeast rice
1 tbsp corn flour

Method:
1. Marinate chicken with all the above ingredients and set aside for 1 hour.
2. Fried chicken, skin side down first, till cooked.
